This plant based journey of mine has been an interesting one to say the least and I could probably go on and on about it for days. The point of this post, though, is to share some of the best vegan resources I’ve come across in the last four months since I dove into this head first.
Being in the blogging world, I already had a handful of people I followed for food inspiration, but I never really paid attention to whether anything was plant based. It was when I started to connect the way my body was feeling to the food I was eating that I started paying attention. These ladies and their Instagram accounts have suddenly become my best friends and daily resources for all the plant based inspo I could ask for.
If you’re thinking about starting to introduce more plants into your diet, I highly recommend looking into following these women.
Jillan Harris is not 100 percent plant based, which is what makes her so relatable for me. She started her plant based journey a few years ago and has slowly found ways to replace all the creamy sauces and cheesy goodness that people like me have the most trouble saying good bye to. Jillan’s blog and insta feed aren’t just about food, but more lifestyle (everything under the sun like my blog) as well. I just find her extremely relatable and really enjoy hearing about her food journey. She reminds me that it’s ok to not be perfect in your plant based diet all the time.
Also! Her and her registered dietician cousin, Tori, are working on a cookbook that’s due out next year!
This woman is super inspiring. I came across her account through following Jillian Harris and I am now addicted to her stories. Erin is very passionate about animal cruelty and does talk a lot about that on Instagram, but what I like the most is watching her cook. She runs a vegan bakery in Vancouver, British Columbia and is always in the kitchen. I feel like she can look in any fridge and just throw everything in a pot and all the sudden she has a drool worthy plant based dish. She makes it look soooo easy and gives me all the inspiration. Actually, I was trying to “pull an Erin Ireland” when I came up with my veggie mash up soup.
PS – this is where that incredible chipotle cream sauce I always put on everything came from. It’s Erin’s recipe!
From My Bowl
From My Bowl is an amazing vegan blog and YouTube channel ran by Caitlin Shoemaker out of Miami. First of all, her year-round ability to go on long walks and be outside is super enviable. Second, she makes some amazing food that you wouldn’t even know is vegan—this is my favorite kind of vegan food, btw. Her mushroom stroganoff recipe seriously changed my life and it’s now in the weekly rotation. I love following Caitlin because she really makes living a healthy lifestyle seem possible, and most days I need an extra dose of inspo.
I’ve been following Minimalist Baker for so long and actually bought the cookbook for our living room bookshelf. It wasn’t until later, though, that I realized all the amazing recipes Dana Shultz, the recipe developer and plant based extraordinaire, were vegan and so, so good. The focus of Minimalist Baker is to make eating plant based super approachable. All the recipes are 10 ingredients or less, require one bowl or can be ready in 30 minutes or less. The vegan biscuit recipe that I seriously can’t get enough is from Minimalist Baker.
Hot for Food
I haven’t been following this account super closely for long, but I know I love it. Hot for Food is ran by Lauren Toyota out of Vancouver. She has completely nailed the art of taking classic comfort food and “veganizing” it. Her videos are amazing and super easy to mimic in the kitchen. Think cream sauces, pizzas and the most decadent desserts. Annnd she has a cookbook coming out next month, so all the plant based goodness can live at home in your kitchen!
