Let me start this post by saying this recipe was born on completely accident. I really had no intention of making something worth recreating, but man oh man was did this soup turn out really good.
I’ll start from the beginning.
I had just finished working out and felt like I really wanted something super healthful—like a shit ton of veggies. So, I decided to break out the veggie broth and throw every vegetable I had leftover in the fridge into a pot on the stove. Add in some spices and nutritional yeast—presto! A completely delicious plant-based meal that does not disappoint.
I would strongly recommend getting a nice loaf of bread (I did olive oil and rosemary) and toasting a few pieces up to eat with your bowl. Dip ‘em in and let ‘em soak up all that amazing broth!
I know. It’s kind of a lot of ingredients, but if you consistently buy produce, you should have post of it in the fridge already.

Veggies Mash Up Soup
- 4 cups vegetable broth (1 carton)
- 1/2 cup water (optional)
- 1/2 tbsp thyme
- 2 tbsp nutritional yeast
- 5-6 red potatoes cut into fourths
- 1/2 yellow onion, chopped
- 7 stalks celery, chopped
- 1 cup cauliflower florets
- 1 cup broccoli florets
- 1 can great northern beans
- 4 cups spinach
- 1 can corn
- dash of ginger
- salt and pepper to taste
Pour veggie brother into a large pot on stove on medium to medium-high heat
Add dense veggies first—potatoes, celery, cauliflower and broccoli
Add in your spices—thyme, ginger, salt and pepper
Let simmer for a few minutes
Now add your onion, corn, beans and nutritional yeast
Let the mixture boil for approx. 10-15 minutes
If you're low on liquid, this is when you'd add the water
Last, add your spinach
Make sure your dense veggies are soft and you're done!
