I came up with this peanut butter cookie recipe on a lazy Sunday when I had no plans of doing anything but laying in my bed and watching reruns of Law and Order: SVU. It’s amazing when you can come up with something magical, isn’t it?! Anyway, I’m sure I’ve said this before, but these cookies are probably one of the best things I’ve ever come up with. They’re nothing super original, but dang they just turned out sooooo good. If you like peanut butter–these cookies will be your jam.
So, I didn’t want to include the flour, but things got a little sticky (literally) without it. You could probably make them without it, but adding just a touch really helped me out.
I should also mention you can have these peanut butter cookies whipped up in about 20 minutes flat—from mixing ingredients to cooling on the rack—they’re super-fast and easy.

Super Easy Peanut Butter Cookies
- 1 cup natural peanut butter I like JIF
- 1 cup Organic Coconut Palm Sugar
- 1 egg
- 1 tsp vanilla
- ¼ cup whole wheat flour
Preheat your oven to 350 degrees
Scoop your peanut butter into a medium size bowl
Add sugar, egg and vanilla—mix
Add a little flour if you feel the dough is too sticky (optional)
Line a cookie sheet with parchment paper and scoop dough balls
Use a fork to create iconic peanut butter cross marks
Bake for 10 minutes
