I love potatoes and am constantly struggling to not have them or any other kind of grain-based carb in every meal. Anyone else? Well, I found a pretty great solution—the cauliflower tot. It’s made using grated cauliflower rice or grated cauliflower, which you may have heard of because it’s become pretty popular. The best part about it though is that it’s a vegetable, a vegetable that’s not a potato but can be made to taste like one.
I will admit that my recipe is a little heavy on the cheese, but you can change that if you’d like. I just think it helps everything stay together better (and I really love cheese).
You can either buy fresh heads of cauliflower or you can buy bags of cauliflower rice, whichever is easiest for you. I’ve made these tots both ways and I will say that it’s a million times easier to just buy the bags. If you’re into grating heads of cauliflower, then go for it, but you’ll save yourself time and a mess with the bags.
Let me know what you think about the amount of cheese or if you try the recipe with less cheese. I’d love to know if they’re still just as mouthwatering—my guess is yes!
Cheesy Cauliflower Tots
- 4 cups grated cauliflower or cauliflower rice
- 2 cups shredded cheddar or monetary jack cheese
- 1 cup shredded Parmesan cheese
- 1 bundle green onion chopped
- 2 eggs
- 1 slice 100% whole wheat bread, blended to crumbs
- salt and pepper to taste
Preheat your oven to 400 degrees
Line a large pan with greased tinfoil
Add all the dry ingredients into a large mixing bowl
Blend or process your piece of wheat bread until it's a fine crumble
Add your bread and two eggs to the mixture
Thoroughly mix with your hands
Mold small tots to line your pan
Bake for 15 minutes and then switch your oven to broil for 2 minutes
